Salsa Fresca Fajita Salad

Whoever said salads were boring never tried this one! Fresh veggies and Riceworks combine to provide a crunch to this tasty salad. This recipe makes a perfect dinner for the family, and can be customized to please every palate.

Ingredients
  • 1 chicken breast or 6oz. steak
  • 1/2 cup lime juice
  • 1 tsp ground cumin
  • 1 tsp red pepper
  • 1/4 tsp salt
  • 4 cups salad greens
  • 1/2 sliced red pepper
  • 1/2 sliced green pepper
  • 1/4 red onion
  • 1/2 cup grated cheese
  • 1 bag Riceworks Salsa Fresca Rice Crisps
Instructions
  1. Mix lime juice, cumin, red pepper and salt. Pour over chicken or steak and refrigerate for 20 minutes to an hour.

  2. Divide salad greens to two plates or bowls and sprinkle with cheese.

  3. Brush vegetables with olive oil then grill with chicken or steak. Thinly slice the chicken or steak.

  4. Serve with Riceworks Salsa Fresca Gourmet Rice Crisps. Garnish with salsa, sour cream and/or guacamole.

Alternate method:
  1. Slice chicken or steak and stir fry with vegetables in a bit of olive oil.

  2. Divide the meat and vegetables into two portions and layer over the salad greens and cheese.

  3. Serve with Riceworks Salsa Fresca Gourmet Rice Crisps. Garnish with salsa, sour cream and/or guacamole.
